Having a picnic is definitely one of my favourite Summer activities (other than going on an actual holiday). Although, depending on where you’re going it can feel like a little get away all in itself. Whether you choose to pack up a quick sandwich and head to the park, or buy some street meat, and sit by the water, picnics are great way to spend quality time with people you care about, whilst enjoying taking in nature.
A little while ago my best-friend and I decided we should pack up a picnic and get outdoors to enjoy our Summer. We planned everything during the week, from food to location and everything in between. It was a lot of fun bouncing ideas back an forth. We opted for a larger yet healthy lunch, as my friend is studying Holistic Nutrition, so anything she comes up with is always perfect to me. Along with that we though it would be better to make everything the night before, so it wouldn’t be a big rush the next morning. Packed with all our goodies was the picnic blanket I made last year, and some pillows to rest on. Well you can only imagine our disappointment when we woke up to rain the next morning whomp whomp whomp. Since the food was all made, it seemed like a waste to try and reschedule for another day. We made the most of it, by setting up inside, and enjoying each others company (as well as every last bite). It wasn’t as good as being outside, but it was better than letting our plan go to waste.
Life is pretty unpredictable and constantly changing, but it’s important to make the most out of any situation you’re dealt with. Live in the moment, and seize every opportunity, after all to appreciate the sun, you have to experience the rain!

Samosa Potato Salad
Made with, green peas, 1 carrot, 1 red onion, mild curry paste, ACV, evoo, honey, and ginger / salt /cayenne / garlic.
A different take on the usual potato salads, but for the better. So full of flavour and guilt free without the battered shell!
Veggie Rice Wraps with Peanut Sauce
We made our rice paper wraps with, carrots, sprouts, beets, cucumber zucchini and avocado, which made them nice and crunchy! As tasty as these were on their own, the peanut sauce made these even better! You can fill these with anything, but I love the colours of the veggies poking through!
Homemade peanut sauce FTW, consisting of, peanut butter (duh), tamari, ginger, garlic, cayenne, maple syrup and water!
Coconut Yogurt Parfait
A healthier take on the traditional parfait, made with coconut yogurt, and homemade granola. This was my first time trying coconut yogurt, and boy was I impressed! We finished these in a matter of minutes!
Refreshing and detoxifying! My friend made this with the juice from one lemon, 1 lime, 6 cups of water 1 tbsp of activated charcoal and a little bit of maple syrup!
Of course, don’t forget to top it off with some edible flowers!
