Spiked Pink Lemonade Pops

Spiked Pink Lemonade Pops

Homemade popsicles are definitely one of my go-tos during Summer. Refreshing, icy & so delicious because you can control exactly what you want to taste. Why not spike it up a little and create a Cocktail Pop, with a little bit of alcohol? My usual drink of choice is a Vodka Soda, however when it comes to a popsicle I want something a little sweeter. So, I thought it would be better to mix with pink lemonade #Summer! Popsicles are so easy to make, and you can find molds almost anywhere now days. If you’re not a vodka drinker, don’t worry these pops don’t have an overbearing taste.

*Keep in mind when freezing alcohol it’s a lot harder, as it has a lower freezing point. I worked out the measurements (after a few tries) to fit my mold, but you might need to test out what works for you, depending on what popsicle mold you use.

Ingredients
  • 1 Tbsp of Sugar
  • 2 Cups of Lemon Juice
  • 1 Cups of Water
  • 1/ 2 Cup of Cranberry Juice or Raspberry Juice
  • A Splash of Club Soda (Optional)
  • 3 Shots of Vodka
  • Lemon Slices

Let’s Get Started

Simply mix all your ingredients together and give it a little taste test. As I said before, you want it to taste just right, so add more or less of whatever you need. Next, add a few lemon slices to the bottom of your mold and pour the mix in. Freeze for a couple of hours or overnight and enjoy a delicious spiked pop!!
