Lemon Squares

Have you ever been asked, what to do when life gives you lemons? If we were talking to the younger me, I’d say set up a stand on your front lawn and start selling some refreshing lemonade! Do kids still do that these days?

Well here’s a better idea, trying making these delicious Lemon Squares. Fresh lemon juice and zest give these squares the yummy rich filling, which is paired perfectly with a flaky (yet crispy) crust. Seriously, they will melt in your mouth! Not to mention, they are the perfect size treat, that you can definitely indulge in more than one. Perfect for a hot Summers day, or make to give to a friend. These lemon squares will not disappoint!


Prep time: 15 mins – Cook time: 28 – 30 mins – Makes: 16 Squares


Ingredients
Crust
  • 1 1/4 Cup of All Purpose Flour
  • 1/4 Cup of Icing Sugar
  • 3/4 Stick of Crisco Shortening or Salted Butter
Lemon Filling
  • 1 Cup of Sugar
  • 2 Tbsp of  All Purpose Flour
  • 1/4 Tsp of Baking Powder
  • 2 Eggs
  • 1/4 Cup of Freshly Squeezed Lemon Juice
  • 2 – 3 Tsp of Grated Lemon Zest
Topping
  • 1/4 Cup of Icing Sugar
  • 2 Tbsp of Freshly Squeezed Lemon Juice

Let’s Get Started
  1. Start by preheating your oven to 350 degrees, and line an 8 inch baking tray with foil (Grease the foil with butter or cooking spray).
  2. In a bowl, combine flour, baking powder and fold in the Crisco or Butter, to create a crumbly dough.
  3. Press down the dough into the bottom of your pan, and pre bake for 15 mins.
  4. In another bowl, thoroughly mix together the sugar and eggs. Next add the flour, baking powder, lemon juice and zest.
  5. Slowly add the lemon filling into the pre-baked crust, and place back into the oven for 23 minutes.
  6. In another bowl, combine the icing sugar and lemon juice and set to the side.
  7. Once out of the oven, cover with the topping (the icing sugar will melt with the heat), or you can place back into the oven for an additional few minutes.
  8. Place on a wire rack (still in the pan) to completely cool (2 hours), before removing and cutting.
  9. Add a little more icing sugar to the top if you wish.


 If you have any leftovers.. store them in an airtight container (at room temperature or in the refrigerator), for 2-3 days.
